Ingredients

  • 7 to 8 medium tomatoes
  • 1 large onion
  • 1 1/2 tsp. garlic powder
  • 1 Tbsp. mild jalapeno peppers
  • 1 c. vinegar
  • 1 1/2 tsp. oregano
  • 1/2 tsp. cumin
  • 1/8 c. lemon juice
  • 6 oz. can tomato paste
  • 1/8 c. sugar
  • 1 Tbsp. salt

    In a small pan, boil water and plop tomatoes in for about 10 seconds.

    Blanch skin.

    Quarter tomatoes; put in saucepan until quite thick, about 1 hour without cover.

    Add all ingredients and simmer for 2 hours.

    Freeze in jars.

    Makes six half pints.
