Ingredients

  • 10 lbs. tomatoes
  • 13 hot peppers (jalepeno or habenera)
  • 4 green peppers
  • 1 1/2 lb. onions
  • 1 Tbsp. salt
  • 1 tsp. garlic (8 pressed cloves)
  • 2 1/2 tsp. black pepper
  • 1 1/2 tsp. crushed red pepper
  • 2 - 3 Tbsp. chopped, fresh cilantro
  • 2/3 c. lemon juice

Directions

    Blend all chopped ingredients along with juices in large (8 qt.) pan.

    Bring to a boil and simmer for 15 minutes.

    Can in water bath for 10 minutes.
