- 2/3 c. flour
- 1/2 pkg. taco seasoning mix
- 2 eggs
- 1 Tbsp. water
- 4 chicken breast halves, skinned, boned and pounded to 1/4-inch
- 1 c. cornmeal
- 2 Tbsp. butter
- 1 Tbsp. vegetable oil
- 1/2 lb. Monterey Jack cheese, sliced
- 1/2 c. chunky taco sauce
Directions

1Combine flour and taco mix in a small bowl.

2Beat eggs with water in another bowl.

3Dip each chicken piece in flour mix.

4Coat with egg, then roll in cornmeal.

5Refrigerate 30 minutes.

6Melt butter with oil in a large skillet over medium-high heat.

7Add chicken and fry until done (about 3 minutes per side).

8Transfer to baking pan.

9Top each chicken piece with 2 slices of cheese and 2 tablespoons salsa.

10Broil until cheese melts.
