Salsa Chicken

  • 4 Chicken Breasts
  • uncooked; small can tomato paste; 1 c frozen corn; can drained sliced olives; jar salsa (preferrably Drew's Salsa); shredded cheese to taste - about 2 cups.

    Combine salsa, corn, olives and tomato paste in a small bowl. Put chicken in a casserole dish (spray w/nonstick spray), cover with sauce. Cover dish w foil and bake at 350 for an hour, or until chicken is cooked through. Take off foil, add cheese and bake about 10-15 minutes more. Serve over rice with avocado and tomato slices.
