  • 4 unbreaded chicken breast filets, thawed
  • 2 Tbsp. olive oil
  • 1/3 c. red bell pepper, chopped
  • 1/3 c. green bell pepper, chopped
  • 1/3 c. tomatoes, chopped
  • 1/3 c. cut corn
  • 1/3 c. onions, chopped
  • 1/2 tsp. garlic powder
  • 1 tsp. oregano
  • 1/4 tsp. cumin
  • 2 Tbsp. red wine vinegar
