- 2 small tomatoes, peeled and chopped
- 1/4 c. onion, chopped
- 1 clove garlic
- 1/2 can pickled jalapeno peppers plus 1/2 tsp. of the liquid
- 1 tsp. vegetable oil
- 1 tsp. Mexican herb mix
Directions

1Place tomatoes, onion, garlic and jalapenos in a food processor.

2Blend to desired consistency.

3Heat oil in a saucepan, add tomato mixture and Mexican herb mix.

4Bring to a boil, decrease temperature and cook gently for 10 minutes.

5Allow salsa to cool.

6Pour into glass jars and refrigerate until ready to use. Keeps one month.
