- 1 pound Pound Tomatillos Or Tomate Verde
- 1 whole Medium White Onion
- 3 whole Serrano Chiles
- 4 cloves Garlic
- 12 sprigs Cilantro
- 2 Tablespoons Oil
- Salt To Taste
Directions

1Remove papery husks from tomatillos and rinse to remove the sticky residue.

2Quarter the onion.

3Add tomatillos, onion, chiles and garlic to a large pot and just cover with water.

4Bring water and ingredients to a boil and then simmer for 10 minutes.

5Blend the cooked ingredients and cilantro with cooking water until smooth, about 30 seconds.

6Heat 2 tablespoons of cooking oil in the pot.

7Pour the blended salsa back into the pot with the hot cooking oil.

8Reduce heat and simmer for 20 minutes.

9Add salt to taste.
