  • dry salt jowl
  • 1/4 c. water
  • sugar (brown if desired)

Directions

    Select dry salt jowl reasonably thick with woven lean strips across the center.

    Slice to medium thick slices.

    Add water to skillet to cover meat slices.

    To the water add sugar.

    Boil about 5 minutes; drain and cook until a golden brown.

    This is better if not cooked until crisp.
