- 1/2 tsp. cream of tartar
- 1 tsp. vanilla flavoring
- 2 c. white sugar
- 1 c. chopped pecans
- 1 pkg. saltines, crushed
Directions

1Beat egg whites until fluffy.

2Add flavoring and cream of tartar.

3Continue to beat while adding sugar.

4Fold in saltines and pecans.

5Bake in oblong dish (9 x 13-inch) pan for thirty minutes at 350°.

6Cake should cool until cold.

7Then add 12 ounces of Cool Whip on top of cooled cake.

8Then sprinkle with coconut to your liking.

9Keep refrigerated until ready to serve.
