Ingredients

  • 1 lb ground chicken
  • 1/2 bell pepper, chopped
  • 2 tomatoes, chopped
  • 1/4 cup red onion, chopped
  • 3 clove garlic, minced
  • 1 tbsp oregano
  • 1 tbsp cumin
  • 1 tsp black pepper
  • 3 tbsp chili powder
  • 1/4 tsp cayenne pepper
  • 1 -24 oz can tomato sauce or pasta sauce
  • 1 -15.5 oz can cannellini beans, drained and rinsed
  • 1/2 cup water

Directions

    Brown ground chicken in a large skillet.

    Drain and set aside.

    In the same skillet saute tomatoes, bell pepper, garlic and red onions in olive oil until tender.

    Add chicken to veggies.

    Stir in sauce, seasonings and water.

    Simmer for 30 minutes covered on low heat.

    Serve with grated cheddar cheese, sour cream, chopped green onions or your favorite toppings.
