- 3 medium yellow crookneck squash or zucchini
- 6 slices bacon
- 1/3 c. chopped onions
- 1/2 c. dry bread crumbs
- 1 Tbsp. butter or margarine
- 1 tsp. salt
- 1 tsp. chili powder
Directions

1Slice squash in half lengthwise and scoop out seeds.

2Parboil for 10 minutes.

3Put in single layer in shallow pan; sprinkle with salt (chili powder also), chopped onion and bread crumbs.

4Top each half with bacon slice or cooked carne adobado.

5Bake at 350° with water just to cover bottom of pan until squash is tender and bacon is browned.

6Serves 4 to 6.
