Santa Fe Nectarine Salad

  • FOR THE DRESSING:
  • 1/2 cups Peach Preserves
  • 1/4 cups Freshly Squeezed Lime Juice
  • 2 Tablespoons Vegetable Oil
  • 1/4 teaspoons Ground Ginger
  • 1/4 teaspoons Salt
  • 1/8 teaspoons Freshly Ground Black Pepper

  • FOR THE SALAD:
  • 2 cups Purchased Finely Shredded Coleslaw Blend (from A 16 Oz. Package)
  • 2 cups Mixed Romaine And Leaf Lettuce
  • 2 whole Nectarines Or Peaches, Pitted And Thinly Sliced
  • 1 cup Seedless Red Grapes
  • 1 whole Jalapeno (or 2), Seeded And Chopped
  • 2 Tablespoons Chopped Fresh Cilantro

Directions

    In a small bowl, combine all of the dressing ingredients; mix well.

    In a large bowl, combine all of the salad ingredients.

    Just before serving, add dressing; toss gently to mix. (Rather than tossing the salad, I like to serve the dressing on the side.)
