Sardine Beignets

  • 10 sardines fresh
  • 2 eggs beaten
  • 1 cup all-purpose flour
  • 5 ounces milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pinch cayenne pepper
  • vegetable oil

    Preheat the oil to 360 degrees F.

    Clean the scales from the fish and eviscerate them. Remove the backbones and heads if they upset you. Combine the eggs, milk, flour and cayenne pepper in a bowl and beat well. Add salt and pepper.

    Heat at least 4 inches of oil in a large pan. Holding the fish by their tails, dip them in the batter and then drop them in the hot oil until they are golden brown, about 3 minutes. Remove the sardines from the oil and pile them on a piece of absorbent paper. Sprinkle with salt and pepper and serve with a large glass of beer.
