  • 500g firm white fish fillets, roughly chopped King Sooper's 1 lb For $7.99 thru 02/09
  • 1/4 cup finely chopped mint or coriander
  • 1/4 cup KRAFT Smooth Peanut Butter
  • 1 red onion, finely diced
  • 1 stem lemongrass, finely sliced
  • 1 tsp. finely chopped chilli
  • 1 teaspoon minced garlic
  • 1 teaspoon fish sauce
  • flour, for rolling
  • Dipping Sauce
  • 1/4 cup fish sauce
  • 1 tablespoon finely chopped Vietnamese mint or coriander
  • 1 tablespoon brown sugar
  • juice of 1 lime
  • 1 teaspoon finely chopped chilli

Directions

    Place the first 8 ingredients into a food processor and blend until smooth.

    Shape tablespoons of mixture into balls or square shapes and roll in flour to coat.

    Chill for 15 minutes.

    Combine ingredients for dipping sauce ; chill.

    Shallow-fry fish bites over medium heat for 5 minutes or until golden brown and cooked through.

    Thread onto skewers or serve as individual bites with dipping sauce.
