- 1 pound Large Pecan Halves
- 1 cup Confectioners Sugar
- 1 quart Canola Oil
- 1- 1/2 teaspoon Salt
- 2- 1/4 teaspoons Sweet Paprika
- 1- 1/2 teaspoon Cayenne Pepper
- 1- 1/2 teaspoon Fresh Ground Black Pepper
Directions

1Mix the seasonings in a large bowl.

2Blanch the pecans in boiling water for 5 minutes, then drain well.

3Coat the nuts with the powdered sugar.

4Heat the oil in a large pot over moderately high heat until it reaches 35o degrees.

5Add the pecans and fry until golden brown (about 4 minutes).

6With a slotted spoon, transfer the pecans to the seasoning mixture and toss until well coated.

7Let cool completely before serving.
