Ingredients

  • 1 tablespoon olive oil good
  • 1 tablespoon dark sesame oil
  • 2/3 cup diced red onion small-
  • 1 1/2 teaspoons minced garlic
  • 1 1/2 fresh ginger root minced
  • 2 tablespoons red wine vinegar good
  • 1/4 cup light brown sugar packed
  • 2 tablespoons soy sauce
  • 1/2 cup smooth peanut butter
  • 1/4 ketchup
  • 2 tablespoons dry sherry
  • 1 1/2 teaspoons lime juice freshly squeezed, I used 2 limes

Directions

    Cook the olive oil, sesame oil, red onion, garlic, ginger root in a small, heavy bottomed pot, over medium heat until the onions are transparent, 15 to 20 minutes.

    In a bowl whisk in the vinegar, sugar, soy sauce, peanut butter, ketchup, sherry and lime juice.

    Add to the onion mixture and cook for 1 minute.

    Cool and use alongside the chicken.
