Ingredients

  • 2 c. frozen hash brown potatoes
  • 2 Tbsp. chopped onion
  • 2 Tbsp. margarine
  • 1 c. shredded sharp Cheddar cheese
  • 1 lb. regular or hot sausage, cooked and drained
  • 4 oz. sliced fresh or canned mushrooms (optional)
  • 4 eggs
  • 1/2 c. milk
  • 1/2 tsp. salt
  • 1/4 tsp. cracked pepper

Directions

    Fry potatoes and onions in margarine until golden brown. Place in greased 8 or 9-inch glass baking dish.

    Top with cheese. Crumble sausage and spread over cheese; top with mushrooms. Combine eggs, milk, salt and pepper; pour over sausage.

    Bake at 350° for 30 to 35 minutes.
