- 2 c. frozen hash brown potatoes
- 2 Tbsp. chopped onion
- 2 Tbsp. margarine
- 1 c. shredded sharp Cheddar cheese
- 1 lb. regular or hot sausage, cooked and drained
- 4 oz. sliced fresh or canned mushrooms (optional)
- 4 eggs
- 1/2 c. milk
- 1/2 tsp. salt
- 1/4 tsp. cracked pepper
Directions

1Fry potatoes and onions in margarine until golden brown. Place in greased 8 or 9-inch glass baking dish.

2Top with cheese. Crumble sausage and spread over cheese; top with mushrooms. Combine eggs, milk, salt and pepper; pour over sausage.

3Bake at 350° for 30 to 35 minutes.
