- 1 cup vinegar
- 2 teaspoons sugar
- 2 bay leaves
- 5 -6 peppercorns
- 6 -8 cloves garlic
- 14 teaspoon allspice
- 14 cup flour
- 1 -2 lb beef chuck roast
- 34 tablespoon shortening
- 18 teaspoon salt
Directions

1Wipe beef with a damp clothe.

2Place in a deep 10 inch container.

3Add vinegar and seasoning to beef, add enough water to cover.

4Place in refrigerator , covered, for 12-18 hours.

5Drain beef, reserving 1 cup of liquid.

6Mix flour with salt, sprinkle over beef.

7Heat shortening in heavy kettle or skillet.

8Add beef, cook until lightly browned on all sides.

9Turning, place rack under beef, add 1/2 cup of reserved liquid.

10Cover, cook over low heat for 3 hours or until tender.

11Add additional liquid if necessary.

12Prepare gravy, adding sugar to addltional flour.
