  • 5 lb. chuck of beef
  • salt and pepper
  • 1 clove garlic
  • 3 large onions
  • 1 pt. vinegar
  • 2 slices lemon
  • 2 Tbsp. mixed pickling spices
  • 4 c. water

Directions

    Slash the roast and insert slices of garlic in the slits.

    Rub well with salt and pepper and place in a glass or earthenware bowl.

    Cover the top with one of the onions, sliced.

    Heat together the water, vinegar, lemon slices and pickling spices and pour the hot marinade over the bowl.

    Cover tightly and let stand 2 or 3 days before cooking.

    Turn the meat occasionally so that it will be marinated evenly throughout.
