- salt and pepper
- 1 clove garlic
- 3 large onions
- 1 pt. vinegar
- 2 slices lemon
- 2 Tbsp. mixed pickling spices
- 4 c. water
Directions

1Slash the roast and insert slices of garlic in the slits.

2Rub well with salt and pepper and place in a glass or earthenware bowl.

3Cover the top with one of the onions, sliced.

4Heat together the water, vinegar, lemon slices and pickling spices and pour the hot marinade over the bowl.

5Cover tightly and let stand 2 or 3 days before cooking.

6Turn the meat occasionally so that it will be marinated evenly throughout.
