- 1 (16 oz.) can sauerkraut, drained
- 1 c. grated carrots
- 1 c. chopped celery
- 1 c. chopped green pepper
- 1 c. chopped onion
- 1 (4 oz.) jar diced pimiento, drained
- 3/4 c. sugar
- 1/2 c. vegetable oil
Directions

1In a large bowl, mix sauerkraut, carrots, green pepper, onion and pimiento.

2In a jar or small bowl, combine sugar and oil. Pour over vegetables; mix well.

3Cover and refrigerate for at least 8 hours.

4Yields 10 to 12 servings.
