Sausage Bean Soup

  • 1 lb. hot sausage
  • 2 (15 oz.) cans kidney beans
  • 1 (16 oz.) can tomatoes
  • 1 large onion
  • 1/2 tsp. garlic powder or salt
  • 1/2 tsp. thyme
  • 1/4 tsp. pepper
  • 1 large potato, diced small
  • 1/2 c. water

Directions

    Put undrained beans and tomatoes in food processor.

    Process until just chopped, not mashed.

    Brown and drain sausage.

    Add seasonings, potatoes, onion and water.

    Add to tomatoes and beans. Bring to boil and simmer for 2 hours.

    Serves 10 to 12.
