- 1 lb sausage
- 1 large onion chopped
- 2 eggs beaten
- 1 1/2 c. self rising cornmeal
- 1 (17 oz) can cream corn
- 3/4 c. milk
- 1/4 c. oil
- 8 oz shredded sharp cheddar cheese
Directions

1Heat oven to 425°.

2Grease 10 inch skillet.

3Brown sausage and onion; drain.

4Combine eggs, cornmeal, corn, milk and oil.

5Pour one half batter into pan; sprinkle with sausage and onion.

6Add cheese.

7Pour remaining batter over top.

8Bake for 30 40 minutes. Let stand 10 minutes before serving.
