  • 1 lb. pork sausage
  • 1 1/2 c. Cheddar cheese, shredded
  • 1 1/2 c. Monterey Jack cheese, shredded
  • 1 jalapeno pepper, seeded and thinly sliced
  • 8 flour tortillas
  • 1 tsp. vegetable oil
  • guacamole, sour cream and salsa

    Brown sausage.

    Drain well.

    Set aside.

    Arrange 4 tortillas on cookie sheet.

    Divide sausage and cheeses evenly over 4 tortillas.

    Sprinkle on jalapeno pepper.

    Place remaining 4 tortillas on top of sausage mixture.

    Brush tops with oil.
