- 1/2 lb. smoked sausage, cut into 1/2-inch thick rounds
- 1 small onion, chopped
- 1 small bell pepper, chopped
- 1 rib celery, chopped
- 1 c. raw rice
- 1 tsp. salt
- 2 c. water
Directions

1Fry sausage rounds, over low heat until slightly browned. Drain sausage on paper towel.

2Pour off fat except 3 tablespoons. Saute onion, celery and bell pepper in same pan until wilted, not brown.

3Add 2 cups water and 1 teaspoon salt.

4Bring to boil and cook 2 minutes.

5Remove from heat; add sausage and raw rice.

6Pour all into a greased casserole with tight fitting lid.

7Cover and bake 45 minutes at 350°.
