Sausage-Vegetable Dinner

  • 3/4 lb. Polish sausage
  • 4 medium baking potatoes
  • 1 medium sized green pepper, cut into strips
  • 4 medium carrots, cut into 3 x 1/2-inch strips
  • 1 (16 oz.) can French-style green beans, drained
  • 1 medium onion, quartered
  • 1 medium head cabbage, cored and quartered
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. water

    Cut sausage diagonally into 1/2-inch slices.

    Wash potatoes; cut into 1/3-inch crosswise sections.

    Layer sausage, potatoes and next 5 ingredients in order given in a large Dutch oven, sprinkling each vegetable layer with salt and pepper.

    Add water and bring to a boil.

    Cover, reduce heat and simmer 35 to 45 minutes or until vegetables are tender.
