Sauted Rainbow Chard

Ingredients

  • 1 med chopped onion
  • 2 cloves of minced garlic
  • large bunch of rainbow kale
  • juice of 1 lemon
  • 2 tbsp olive oil
  • duck crackle or slice of diced bacon
  • a splash of dry white wine
  • salt and pepper to taste

Directions

    heat oil over medium heat in a heavy pan add duck or bacon and crisp.

    add onion and saute until translucent and add garlic and saute of a minute or two.
  3. 3
    add kale and let it wilt and add wine to help the wilting.
  4. 4
    salt and pepper to taste and add the lemon juice.
  5. 5
    Serve hot.
