Ingredients

  • 1 stick unsalted butter
  • 1 medium tomatoes diced
  • 1/2 large red onion sliced in strips
  • 2 jalapeno sliced in strips
  • 6 mushrooms halved then sliced
  • 4 garlic cloves minced
  • 1 tbsp dried parsley
  • 1/3 cup fresh lemon juice
  • 1 salt and pepper to taste
  • 5 lb cleaned clams
  • 1 cup grated parmesan cheese
  • 1 loaf crusty baguette bread toasted

Directions

    Add first 9 ingredients to large pot, simmer for about 3 minutes add clams, stir to evenly coat, cover and cook over medium high heat for 5 minutes, stir, cover and cook about 4 more minutes, discard any unopened clams.

    Place on large serving tray sprinkle with Parmesan, enjoy!
