- 6 doves, split
- 1/2 c. butter
- 2 Tbsp. celery leaves, chopped
- 1 c. vermouth or dry white wine
- 1/4 c. minced onion
- 1/2 tsp. tarragon
- salt and pepper
Directions

1Saute doves in butter 5 minutes until browned.

2Add wine, onion, celery, salt and pepper.

3Cover and simmer over low heat 20 minutes.

4Add tarragon and simmer uncovered 15 minutes or until tender.
