Sauteed Doves

  • 6 doves, split
  • 1/2 c. butter
  • 2 Tbsp. celery leaves, chopped
  • 1 c. vermouth or dry white wine
  • 1/4 c. minced onion
  • 1/2 tsp. tarragon
  • salt and pepper

Directions

    Saute doves in butter 5 minutes until browned.

    Add wine, onion, celery, salt and pepper.

    Cover and simmer over low heat 20 minutes.

    Add tarragon and simmer uncovered 15 minutes or until tender.
