Sauteed Shrimp

- 1 Tbsp. olive oil
- 2 tsp. fresh basil
- 1 shallot, peeled and chopped
- 1/2 lb. raw shrimp, cleaned with tails left on
- 1 lemon
- salt and freshly ground parsley sprigs
Directions

1In a saute pan or skillet over medium heat, heat oil with basil; add shallot.

2Saute until tender; do not brown.

3Add shrimp and cook, stirring 3 to 5 minutes, or just until pink.

4Squeeze lemon onto shrimp; season to taste and sprinkle with parsley. Serve from pan at table.
