Sauteed Silverbeet

Ingredients
- 3 tablespoons shallots Chopped
- 1 tablespoon olive oil
- salt to taste
- freshly ground black pepper to taste
- fresh lemon juice to taste
Directions

1Remove center rib from silverbeet and discard.

2Blanch silverbeet in lightly salted boiling water for 30 seconds and then drain and plunge into ice water to stop cooking.

3Drain and set aside.

4To serve, saute shallots in oil until soft but not brown.

5Add blanched silverbeet and saute until tender but still with some texture.

6Season with salt, pepper and drops of lemon juice.

7Serve immediately.
