Sauteed Spinach Leaves

- 1 1/2 lb. fresh spinach
- 2 Tbsp. butter
- salt and freshly ground pepper to taste
- 1/4 tsp. nutmeg to taste
Directions

1Cut away and discard any tough spinach stems and blemished leaves.

2Wash spinach thoroughly in cold water and drain well. Heat butter in a large skillet, then add spinach, salt and pepper to taste and nutmeg.

3Stir as the spinach wilts.

4Cook over medium-high and cook until the spinach leaves are thoroughly wilted.

5Remove from heat and serve.
