  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 clove Garlic, Minced
  • 1/2 cups Yellow Onion, Sliced Thin
  • 1 bag (10oz) Fresh Spinach Leaves
  • 3/4 cups Cherry Tomatoes, Quartered
  • 1/4 cups Light Feta Cheese, Crumbled
  • 1 pinch Salt And Pepper, to taste

Directions

    1. Heat a skillet over medium-high heat. Add extra virgin olive oil and minced garlic; saute until golden, about 45 seconds.

    2. Add onions; saute until caramelized (about 2 minutes).

    3. When onions have caramelized, add the fresh spinach leaves to the skillet; saute until reduced.

    4. When spinach is almost reduced, add cherry tomatoes; saute 1 minute.

    5. Remove skillet from heat; add crumbled light feta cheese.
