- 1 Tablespoon Extra Virgin Olive Oil
- 1 clove Garlic, Minced
- 1/2 cups Yellow Onion, Sliced Thin
- 1 bag (10oz) Fresh Spinach Leaves
- 3/4 cups Cherry Tomatoes, Quartered
- 1/4 cups Light Feta Cheese, Crumbled
- 1 pinch Salt And Pepper, to taste

11. Heat a skillet over medium-high heat. Add extra virgin olive oil and minced garlic; saute until golden, about 45 seconds.

22. Add onions; saute until caramelized (about 2 minutes).

33. When onions have caramelized, add the fresh spinach leaves to the skillet; saute until reduced.

44. When spinach is almost reduced, add cherry tomatoes; saute 1 minute.
