- 1/2 lb. smoked sausage (kielbasa)
- 1/2 lb. bacon
- 1/2 c. chopped onion
- 1/4 c. chopped celery
- 1/4 c. chopped bell pepper
- 2 (16 oz.) cans tomatoes
- 1/2 c. water
- 2 c. uncooked rice
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/8 tsp. Tabasco
- 1 Tbsp. basil leaves
Directions

1Cut sausage and bacon into 1-inch pieces.

2Saute together in a large Dutch oven to render fat.

3Drain fat.

4Return meat to pan and add onion, celery and bell pepper.

5Saute about 3 minutes on medium-high, stirring often.

6If tomatoes are whole, chop and add entire contents to mixture along with water, rice and remaining ingredients.

7Bring to a boil and cook on top of stove for 10 minutes on medium-low.

8Pour into a large greased (Pam) casserole dish.

9Cover tightly and bake at 350° for 1 hour.
