Ingredients

  • 1/2 lb. smoked sausage (kielbasa)
  • 1/2 lb. bacon
  • 1/2 c. chopped onion
  • 1/4 c. chopped celery
  • 1/4 c. chopped bell pepper
  • 2 (16 oz.) cans tomatoes
  • 1/2 c. water
  • 2 c. uncooked rice
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1/8 tsp. Tabasco
  • 1 Tbsp. basil leaves

Directions

    Cut sausage and bacon into 1-inch pieces.

    Saute together in a large Dutch oven to render fat.

    Drain fat.

    Return meat to pan and add onion, celery and bell pepper.

    Saute about 3 minutes on medium-high, stirring often.

    If tomatoes are whole, chop and add entire contents to mixture along with water, rice and remaining ingredients.

    Bring to a boil and cook on top of stove for 10 minutes on medium-low.

    Pour into a large greased (Pam) casserole dish.

    Cover tightly and bake at 350° for 1 hour.
