- 4 medium size sweet potatoes or yams
- 1 c. sugar
- 1/4 c. butter
- 3 tsp. vanilla
- 1/8 tsp. salt
- dash of cayenne pepper
- 1/4 c. water
- nutmeg
Directions

1Peel sweet potatoes and cut in 1/4-inch thick lengthwise slices.

2Arrange in skillet, preferably heavy, sprinkling layers with sugar and dotting with butter.

3Add vanilla, salt and cayenne to water to taste, and pour over potatoes.

4Grind nutmeg over top.

5Cover skillet.

6Bring liquid to boil rapidly.

7Lower heat and simmer 20 minutes, adding more liquid, as needed, to prevent scorching.
