  • 1 teaspoon butter
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 12 ounces Italian bread, cut into 1-inch cubes
  • 2 cups low-fat buttermilk
  • 2 cups fat-free milk
  • 1 1/2 cups egg substitute
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups (8 ounces) shredded 2% reduced-fat Cheddar cheese

    Preheat oven to 375°.

    Melt butter in a small skillet over medium heat. Add onion and garlic; saute 5 minutes. Transfer cooked onion to a large bowl; add bread cubes, tossing well to combine.
