Savory Cabbage Rolls

  • 1 c. instant rice
  • 2 lb. ground beef
  • 1/2 c. chopped onion
  • 2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 (16 oz.) can tomatoes
  • 1 (8 oz.) can tomato sauce
  • 12 cabbage leaves
  • 2 Tbsp. cornstarch
  • 2 Tbsp. cold water

Directions

    Combine rice, beef, onion, salt, pepper and drained tomatoes that have been cut-up into chunks; mix well.

    Steam cabbage leaves for 3 minutes or until just limp.

    Spoon meat mixture onto leaves. Roll each leaf around meat, turning ends under.

    Place in large saucepan or Dutch oven.

    Pour tomato sauce and remaining tomato juice over rolls.

    Cover; simmer for 30 minutes.

    Remove rolls to warm platter.
