Ingredients
- 2 whole Medium Yellow Onions, Thinly Sliced
- 2 whole Refrigerated Pie Crusts
- 1 whole Bosc Pear, Cored And Thinly Sliced
- 13 cups Blue Cheese Crumbles
- 13 cups Walnut Pieces
- 8 slices Prosciutto - Roughly Torn
- 1 whole Egg
Directions

1Preheat oven to 415 F.

2In a large skillet over low heat, add the onion slices.

3Toss them occasionally, caramelizing them until theyre sugary and brown and sweet and you want to freak out.

4This will take about an hour.

5Roll out your pie crusts on parchment paper lined rimmed baking sheets.

6Evenly arrange half of the onions in the center of each rolled out pie crust.

7Top each with half of the sliced pears (fanned out), blue cheese, walnut pieces and the prosciutto strips.

8Fold the outer two inches of dough in towards the center of the the galette, kind of overlapping.

9In a small bowl, lightly beat the egg.

10Brush the egg wash over the outer crust, and bake the galettes for about 30 minutes.

11Slice and serve!
