Ingredients

  • 3 cups chicken or 3 cups vegetable stock
  • 2 cups dried orecchiette (or similar maccaroni product)
  • 2 tablespoons butter
  • 2 tablespoons butter, softened
  • 1 tablespoon olive oil
  • 14 teaspoon dried oregano
  • 14 teaspoon dried basil
  • 14 teaspoon cracked red pepper
  • 3 garlic cloves, minced
  • 2 dashes onion powder
  • 14 cup shredded parmesan cheese (or Gran Padano)
  • 12 cup shredded fresh asiago cheese
  • 1 cup shredded provolone cheese
  • 12 tablespoon kosher salt

Directions

    Bring Stock to a boil and Add 2 Tbsp Butter and Orecchiette.

    Boil until tender but not soft.

    Drain Stock and reserve one cup.

    Return Pasta to pot and reduce heat to low.

    Add herbs, remaining Butter, Oil, garlic and onion powder.

    Stir until well mixed.

    Slowly stir in cheese making sure to add a small amount of broth as needed to obtain a creamy consistency.

    This is a slow proess and can take up to 20 minutes.

    Stir in Salt and serve.
