Ingredients
- 1 eggplant, pared
- 2 eggs
- 1 c. bread crumbs
- 1/4 tsp. salt
- 1/8 tsp. paprika
- 1/8 tsp. black pepper
- 2 tsp. Parmesan cheese
- 1/2 tsp. garlic salt
- 1/4 tsp. minced parsley
- 1/4 tsp. dried basil
- pinch of ground red pepper
- 1 Tbsp. Crisco
- 1 lemon, sliced (for garnish)
Directions

1Preheat oven to 375°.

2Slice eggplant into 1/2-inch slices. Beat eggs slightly.

3Drop crumbs and seasonings into blender jar and blend well.

4Pour crumbs on plate.

5Grease 11 x 17-inch jelly roll pan or baking pan with Crisco; heat pan for several minutes in hot oven.

6Dip eggplant in egg and then into crumbs.

7Place on hot baking sheet.

8Bake 15 minutes on each side.

9Serve immediately with lemon slices.
