- 1 lb. boneless pork, cut into 1-inch pieces
- 1 Tbsp. oil
- 1 medium onion, chopped
- 1 (16 oz.) can apricot halves in heavy syrup
- 1/2 c. bottled barbecue sauce
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 1 medium green pepper, slivered
- 1 Tbsp. cornstarch
- 1/4 c. water
- 1 can pineapple pieces, drained (optional)
Directions

1Saute meat in oil in a 10-inch skillet for 10 minutes or until lightly browned.

2Add onion.

3Saute 2 to 3 more minutes.

4Drain apricots.

5Add syrup and barbecue sauce to pork.

6Add salt and black pepper.

7Bring to boil.

8Cover and simmer for 30 minutes or until meat is tender.

9Add green pepper.

10Cover and simmer for 10 minutes.

11Blend cornstarch and water.

12Stir in mixture.

13Cook, stirring, until thickened.

14Add apricots and pineapple; heat gently.

15Serve over rice or parsley noodles.
