Savory Spinach Souffle

Ingredients
- 1/3 c. shredded Parmesan cheese
- 3 Tbsp. sliced green onion
- 1/4 c. margarine or butter
- 1/4 c. flour
- 1 c. milk
- 1/2 tsp. salt
- 1/8 tsp. pepper
- dash of nutmeg
- 4 eggs, separated
- 1 (15 oz.) can spinach, drained or 1 large bunch or bag fresh spinach
Directions

1Grease 1 1/2-quart souffle dish or casserole; coat with 2 tablespoons cheese.

2In saucepan, saute onion in margarine. Blend in flour.

3Add milk, salt, pepper and nutmeg.

4Cook, stirring constantly until thickened.

5Stir in remaining cheese. Add egg yolks, one at a time, beating after each addition.

6Blend in spinach.

7Cool.

8Beat egg whites until stiff but not dry.

9Fold into spinach mixture.

10Pour into prepared dish.

11Bake in 375° oven 35 minutes.

12Serve immediately.
