  • 1 lb. summer squash
  • 1/3 c. saltines, crumbled
  • 1 onion, chopped
  • 1 Tbsp. butter, melted
  • 1/2 c. celery, finely diced
  • 1/2 c. Cheddar cheese, grated
  • 3 Tbsp. chopped green chilies
  • 2 eggs, lightly beaten
  • 1 1/4 c. milk
  • 1 1/4 tsp. salt
  • dash of pepper

Directions

    Cook squash; drain and mash. Saute onion and celery in butter. Add all ingredients together and pour into greased baking dish. Bake at 375° for 25 minutes. Yield: 6 servings.
