- 1 lb. summer squash
- 1/3 c. saltines, crumbled
- 1 onion, chopped
- 1 Tbsp. butter, melted
- 1/2 c. celery, finely diced
- 1/2 c. Cheddar cheese, grated
- 3 Tbsp. chopped green chilies
- 2 eggs, lightly beaten
- 1 1/4 c. milk
- 1 1/4 tsp. salt
- dash of pepper
Directions

1Cook squash; drain and mash. Saute onion and celery in butter. Add all ingredients together and pour into greased baking dish. Bake at 375° for 25 minutes. Yield: 6 servings.
