Savoy Cabbage Soup

- 9/16 cup basmati rice
- 1 tablespoon butter
- 2 cloves garlic minced
- 3 5/8 cups carrots peeled and sliced
- 7 1/8 cups savoy cabbage sliced
- 4 tomatoes coarsely chopped
- 4 1/4 cups vegetable stock
Directions

1Cook the rice according to package instructions then drain and set aside.

2Meanwhile, melt butter in a pan and saute the garlic and carrots for 2 mins. Add the cabbage and saute for another 5 mins. Season with salt and pepper and add the tomatoes and stock. Cover and simmer for 30 minutes.

3Stir in the cooked basmati rice, season with salt and pepper and serve.
