- 1 cup peanut oil
- 5 scallions, cut into 3-inch pieces, white portions lightly smashed
Directions

1Heat a wok or heavy skillet over medium heat.

2Add the oil, then the scallions.

3Cook until the scallions turn brown, about 3 minutes.

4Strain through a fine sieve.

5Let cool to room temperature.

6Pour into a glass jar and refrigerate for no more than 2 days.
