- 1 1/2 lb. bay scallops
- about 2/3 c. fresh lime juice
- 1/2 c. chopped onion
- 1/4 c. tomato juice
- 1 tomato, skinned and chopped
- 1/4 c. olive oil
- salt and pepper
- 1/3 c. chopped green pepper
- 1/8 tsp. Tabasco sauce
- 1 clove garlic, finely chopped
- 1 Tbsp. finely chopped parsley
- 1/2 tsp. thyme
Directions

1Toss the bay scallops with the lime juice.

2Place in a bowl with the remaining ingredients.

3Cover; refrigerate overnight. The lime juice does all the cooking.
