- 5 c. diced raw carrots
- 1 onion, sliced
- 1/2 c. butter
- 1/2 lb. Velveeta cheese
- 12 Ritz crackers
Directions

1Cook carrots until done; drain.

2Saute onion in butter.

3In baking dish, layer carrots and cheese.

4Pour onion and butter over top.

5Crush Ritz crackers; sprinkle on top.

6Bake at 350° for 30 to 40 minutes.
