  • 5 c. diced raw carrots
  • 1 onion, sliced
  • 1/2 c. butter
  • 1/2 lb. Velveeta cheese
  • 12 Ritz crackers

Directions

    Cook carrots until done; drain.

    Saute onion in butter.

    In baking dish, layer carrots and cheese.

    Pour onion and butter over top.

    Crush Ritz crackers; sprinkle on top.

    Bake at 350° for 30 to 40 minutes.
