Scalloped Cattails

  • 6 green cattail spikes
  • 1 qt. water
  • 1 egg, beaten
  • 1/4 c. melted butter
  • pinch of nutmeg
  • 1/4 tsp. pepper
  • 1/2 c. milk
  • 1/4 c. cheese of choice
  • 2 Tbsp. butter

Directions

    Drop the cattails into a quart of boiling water and boil for 4 minutes.

    Drain and cool.

    Scrape off enough of the green part to make about 1 1/4 cups and place in a bowl.

    Add egg, butter, nutmeg and pepper.

    Mix well.
