- 6 green cattail spikes
- 1 qt. water
- 1 egg, beaten
- 1/4 c. melted butter
- pinch of nutmeg
- 1/4 tsp. pepper
- 1/2 c. milk
- 1/4 c. cheese of choice
- 2 Tbsp. butter
Directions

1Drop the cattails into a quart of boiling water and boil for 4 minutes.

2Drain and cool.

3Scrape off enough of the green part to make about 1 1/4 cups and place in a bowl.

4Add egg, butter, nutmeg and pepper.

5Mix well.
