- 600 g salmon fillets
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter
- 1 -2 tomatoes
- 4 sun-dried tomatoes packed in oil
- 125 g mozzarella cheese
Directions

1Preheat oven to 225°C.

2Remove skin and bones from the salmon.

3Season with salt and pepper on both sides and cut into four pieces.

4Thinly slice tomato and mozzarelle cheese.

5Cut sun-dried tomatoes into strips.

6Heat butter in a non-stick coated frying pan and cook salmon pieces, 2-3 minutes per side.

7Place cooked salmon in an oven-proof dish.

8Layer tomato slices, sun-dried tomato strips and finally mozzarella slices over the salmon.

9Sprinkle some black pepper on top.

10Bake in the preheated oven for about 5 minutes, or until mozzarella has melted.
