  • 2 eggs
  • 1 (16 oz.) can kernel corn, drained
  • 1 (16 oz.) can cream-style corn
  • 1 c. sour cream
  • 1/3 c. butter or margarine, melted
  • 1 (4 oz.) can diced green chiles, drained
  • 1/4 c. chopped green onions (include some greens)
  • 1/2 tsp. salt
  • 1 (8 1/2 oz.) pkg. Jiffy corn muffin mix

    Preheat oven to 350°.

    Grease a 2-quart casserole.

    In a large bowl, beat eggs well.

    Add whole kernel and cream-style corn, sour cream, butter or margarine, green chiles, green onions and salt; mix well.

    Add corn muffin mix and stir just until moistened and well blended.

    Pour into casserole dish.

    Bake for 55 to 60 minutes or until top is set and a knife inserted comes out clean.
