- 2 eggs
- 1 (16 oz.) can kernel corn, drained
- 1 (16 oz.) can cream-style corn
- 1 c. sour cream
- 1/3 c. butter or margarine, melted
- 1 (4 oz.) can diced green chiles, drained
- 1/4 c. chopped green onions (include some greens)
- 1/2 tsp. salt
- 1 (8 1/2 oz.) pkg. Jiffy corn muffin mix
Directions

1Preheat oven to 350°.

2Grease a 2-quart casserole.

3In a large bowl, beat eggs well.

4Add whole kernel and cream-style corn, sour cream, butter or margarine, green chiles, green onions and salt; mix well.

5Add corn muffin mix and stir just until moistened and well blended.

6Pour into casserole dish.

7Bake for 55 to 60 minutes or until top is set and a knife inserted comes out clean.

8Serve immediately.
