- 1 small onion, chopped
- 1/2 small green pepper, chopped
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 tsp. salt
- 1/2 tsp. paprika
- 1/4 tsp. dry mustard
- dash of pepper
- 3/4 c. milk
- 1 (16 oz.) can whole kernel corn
- 1 egg, slightly beaten
- 1/3 c. cracker crumbs
- 1 Tbsp. butter, melted
Directions

1Cook and stir onion and green pepper in 2 tablespoons butter until onion is tender.

2Remove from heat.

3Stir in flour, salt, paprika, dry mustard and pepper.

4Cook over low heat, stirring constantly, until mixture is bubbly; remove from heat.

5Stir in milk gradually.

6Heat to boiling, stirring constantly.

7Boil and stir 1 minute.

8Stir in corn and egg.

9Pour into ungreased 1-quart casserole.

10Mix crumbs and 1 tablespoon melted butter; sprinkle over corn.

11Cook uncovered in 350° oven until bubbly, 30 to 35 minutes.
